Rei Do Gado Mango and Arugula Salad

This simple salad is light on ingredients and heavy in flavor. Serve by itself for a healthy and delicious lunch or savor it as a perfect partner to grilled meats and fish.

Prep Time: 10 minutes
Serves: 2-4

1 mango, ripened
¼ c. raspberry red wine vinegar
¼ c. extra virgin olive oil
2 tbs. granulated sugar
8oz fresh arugula, washed a dried (about 3 large handfuls)
2oz. parmesan cheese, freshly grated

Dice mango in to bite-size pieces and set aside. In a large mixing bowl, add vinegar, oil and sugar and whisk vigorously to emulsify. Add arugula and gently toss by hand to avoid bruising the leaves. Remove dressed lettuce by hand, shaking off excess dressing before plating. Top with diced mango and parmesan cheese. Serve immediately. ENJOY!
