Minh’s Protein Bites

When it comes to ridiculously tasty raw-fusion creations, Minh is on the ball. A quick, healthy and delicious snack, Minh’s Protein Bites are the perfect portable pick-me-up for busy bodies.

They are so simple to make and ideal for on-the-go, making them a fresh alternative to the slew of ho-hum energy bars you can find at the grocery store. And because they are packed with clean, nutrient-rich ingredients, these dense cookie dough-like treats only taste sinful. Pop one in your mouth before or after your workout or savor them for dessert (they really are that good). Feel free to change up the ingredients to come up with your favorite flavor combinations.

INGREDIENTS

2 CUPS COOKED QUINOA OR OATS
½ CUP CAROB POWDER
½ CUP COCONUT FLOUR/FLAKES
½ CUP DATES, PITTED
2 TBS COCONUT NECTAR
1 TBS COCONUT OIL
¼ CUP CHOCOLATE CHIPS
2 SCOOPS PROTEIN POWDER (MINH USES FIT 365™)
WATER, AS NEEDED
MACA, CINNAMON, COCONUT FLAKES, CAROB POWDER TO TASTE

DIRECTIONS

  • Transfer quinoa or oats to a food processor adding dates, carob powder, coconut flour and protein powder one at a time, pulsing between each
    ingredient to combine.
  • Add coconut nectar and coconut oil to moisten. Pulse to combine.
  • Water may be added until cookie dough-like consistency is achieved.
  • Stir in chocolate chips or any other mix-ins you like (raisins, dried banana or other fruits are some of Minh’s favorites!)
  • Use a cookie dough/melon scoop to make bite size balls. Using your hands, roll into ball shapes and gently coat with maca, cinnamon,
    coconut flakes, carob powder or any other toppings of your choice.
  • Protein bites can be stored in the refridgerator in a resealable bag or plastic container.
