Just in time for a summertime fitness tune-up, the Health Beauty Life crew spent some quality time with the lovely Carol Alt in her Tribeca loft.
Carol is an international supermodel (the phrase “Supermodel” was coined in her honor). She is also an actress, entrepreneur, best-selling author, cover girl with well over 700 magazine covers to her credit, television personality, raw food champion, philanthropic powerhouse, and fashion trendsetter.
For the average person, any one of these endeavors would constitute a full-time career. Clearly, Carol Alt is not an average person.
At 5’11”, gifted with otherworldly beauty (Playboy magazine called her “The Most Beautiful Woman in the World”), ethereal grace, and an insatiable desire to achieve, the girl who started off waiting tables has led a life beyond what most of us can only dream. Discovered at age 18, the stately blue-eyed brunette parlayed an international modeling gig with Italian Harper’s Bazaar into a lifelong career path.
She continues to inspire new generations of health-minded fitness and fashion aficionados to this day by hosting her own weekly television show, A Healthy You & Carol Alt. The show airs Saturdays and Sundays at 4pm EST on Fox News where Carol shares her raw food lifestyle, fashion and nutrition expertise. She interviews professionals, celebrities, and “everyday people” and shares tips and best practices for maintaining health and wellness.
The Making of an Icon
Born in Flushing, Queens, New York to Muriel, an airline employee and model, and Anthony Alt, a fire chief, Carol’s career gained a fair amount of publicity when she was featured on the coveted cover of the Sports Illustrated Swimsuit Issue in 1982.
During the 1980s Carol appeared on over 500 magazine covers, becoming one the most celebrated models of the era. Dubbed “The Face” by Life magazine, at the height of her popularity, Carol’s high wattage ad campaigns provided a boost in sales for Diet Pepsi, General Motors, Cover Girl Cosmetics, Noxzema, Hanes and numerous others.
Always the trail-blazing entrepreneur, Carol was the first model with the business savvy to produce and successfully market her own line of posters and calendars. Since 1986 Carol has appeared in a variety of films and television productions, continued her work as a model/spokesperson with projects including becoming a consultant with the Le Mirador skincare line and gracing late night TV infomercials.
A contestant on the first season of NBC’s The Celebrity Apprentice with Donald Trump, Carol competed for the Tony Alt Memorial Foundation, named for her brother, which raises funds for scholarships for young adults to continue their studies. Finishing in third place before being eliminated, she was brought back for the final task of the show and was chosen by finalist Piers Morgan to help him become the Celebrity Apprentice. In doing so, she earned $40,000 for her charity.
An international favorite, Carol has starred in 65 films including the Italian TV series Caterina e le sue figlie 2 and Piper, in 2007. In 2009, Carol was one of the contestants of the Italian version of Dancing with the Stars (Rai Uno,) and continues to be recognized and loved by fans throughout Italy and Europe.
In September 2013, Carol joined the Fox News team with her own half-hour Saturday afternoon TV show, A Healthy You & Carol Alt, which features her vast experience and lifelong knowledge about wellness and longevity. Guests include professionals and celebrities who share their signature tips for maintaining health and wellness. Each installment ends with a segment called Ask Carol, in which she answers questions she receives on Facebook and Twitter. A Healthy You & Carol Alt has just been picked up for a second season on Fox News.
In addition to two fiction works, Carol has also written three books that promote her own raw food diet plan: Eating in the Raw: A Beginner’s Guide to Getting Slimmer, Feeling Healthier, and Looking Younger the Raw-Food Way, Easy Sexy Raw: 130 Raw Food Recipes, Tools, and Tips to Make You Feel Gorgeous and Satisfied and The Raw 50: 10 Amazing Breakfasts, Lunches, Dinners, Snacks, and Drinks for Your Raw Food Lifestyle.

Q & A
Our Publisher Patrick Dockry sat down with Carol for a candid chat about her life, overcoming issues and current projects. Let’s sit in and learn about her personal quest to discover, celebrate and share a healthy lifestyle of raw eating, and how it all led to her current starring gig on Fox News.
Is it difficult to maintain a raw food lifestyle in the city?
I learned about raw food and healthy living when I lived in California. When I moved back to New York City I was really worried how I was going to keep up this healthy lifestyle that I had found. I came back to New York and there were actually raw food restaurants and raw food online deliveries…it was amazing. There’s raw food everywhere, and if you can’t find it locally, you can order it online. Just type “raw food” into your computer and a parallel universe comes up!
How did you come to realize that a raw food diet was for you?
It’s a little embarrassing, actually. It was during a photo shoot to raise rain forest awareness called Carol Alt and Friends, in the Rain Forest. Basically, the photographer said that I simply wasn’t in bathing suit condition. I didn’t feel good and I knew I wasn’t. I just didn’t have the energy that I’d had and I didn’t feel or frankly, look my best. To make matters worse, another young 22-year-old actress was on set and everyone was captivated by her energy. I wasn’t angry or jealous, but I was interested. Fascinated, actually. I wondered, what happened? How did I go from her at 22 to me at 32?
Fortunately, a good friend called and said, “Carol, you are the healthiest person I know, you have to meet this doctor. You will never look at food the same way again.” I was starving myself and starting to look bad from malnutrition, so I called the guy, he called me back, and he told me what had been ailing me.
Miraculously, he diagnosed my top-six ailments, which included sinus infections, excess stomach acid everyday, a chronic blood condition, fatigue, bloating, and lack of energy. He even cured me of a rash that had been misdiagnosed as poison sumac by accurately identifying the blood disorder.
Once he told me what I should be eating, it was a major relief. What a miracle to realize that I could eat whatever I want, as long as it is prepared raw and cold pressed. I could eat Tartar and Carpaccio and a whole myriad of delicious foods. I never looked back… why would I?
And you were so impressed by the raw lifestyle, it inspired you to write a book about it, right?
Three books actually. The first was Eating in the Raw, and then The Raw 50, and the most recent is Easy Sexy Raw.
I believe in the lifestyle because it has helped me so much. People say to me, “what… you eat carrots?” Ok, I eat carrots every now and then, but there’s so much that you can do with fruits and vegetables to make delicious dishes because many fruits and vegetables have little flavor, it’s all about the seasonings you add. You can make something taste like a spaghetti dinner, a pizza or a lasagna, but it’s so much better for you.
I understand that you have a new project.
Yes, it’s a show called A Healthy You and Carol Alt. We pitched it to Fox News and they picked it up, now for a second year. It’s amazing. I love doing this show as I feel like it’s everything I went through from starving myself to bringing my health back from below ground zero. All of it was geared towards getting the show.
How long have you been on now?
We just signed for a second year.
Congratulations! We are big fans of the show. I love that you’re kind of hard on the claims of some of the guests. If you aren’t sure about someone, you give real opinions and you really put the pedal to the metal, so to speak.
Yes, I do. I need to know the truth and I just don’t want people to use me as an infomercial. It upsets me that there is so much snake oil out there. People are selling products under the guise of being natural and organic, when in fact, they are not natural or organic, or, in many cases, only one or two ingredients are. It’s mis-marketing and an abuse of marketing language that tricks people into buying things that really are not good for them…and paying more money for it, because the label says it’s natural and organic.
You don’t let them slide do you?
No, I like to get to the bottom of it all. Pretty much everything featured on my show I’ve done or tried, so I know how well it works or how it doesn’t work before the show. That way I can talk about it. I make them convince me. Even if I don’t like something I still give it a chance, but, in the end, I call it as I see it.
How do you get your show ideas or your topics?
A lot of them (the topics) are things that I’ve learned about in the last 17 years with my own health issues, they are recommended by friends (like you, motioning to Patrick,) and I have many friends and colleagues who email me with ideas. The beauty is that Fox News is all news, so I am allowed to offer topics that I believe are news. However I’m not a doctor. I engage experts to come on the show and talk about their particular fields.
You provide a great service…I think you need to be on television.
I agree (laughs). I don’t make any money off of the show, and nobody can bribe me to say anything, as my existence does not depend on cash. I have been very blessed in my life with people who helped me with my health when I was in dire straights, so for me, doing the show is all about paying it forward… and that’s what I’m doing.
We’re thankful for Carol spending time to chat with us. Just as we suspected, she is a shining example of all that we love about Health, Beauty and Life.Be sure to catch Carol on Fox News, Saturdays and Sundays at 4:00 pm EST. Also, visit CarolAlt.com.
