Kale Salad With Queso
Servings: 6
1 bunch kale, large stems removed and leaves finely chopped
1/2 cup toasted pumpkin seeds
2 oz. crumbled queso
2 tbsp. fresh lemon juice
1/2 cup extra-virgin olive oil
1 large shallot, minced
Salt
By breaking up the recipe into 6 portions, you’ll ensure you don’t overeat (after all, kale is not meant to be a calorie bomb of a meal). Try this as a side salad with fish for dinner, or as a light lunch with some grilled chicken on top. Not your thing?
