Need a quick breakfast recipe for your family?

Try: Spanish omelette

Ingredients

  • Eggs – 2
  • Potato, cut into wedges – 1
  • Onion, thinly sliced – 1
  • Paprika – 2 tsp
  • Olive Oil – 1 tbsp
  • Salt – to taste
  • Pepper – 1 tsp
  • Sugar – ¼ tsp
  • Grated cheese – 2tbsp

Instructions  eggs uncooked

Cut the potato into thin wedges. Slice the onion into thin strips. Heat olive oil in a wide mouthed pan (about 6″ diameter). Fry the onions. When it gets transparent, add the potato wedges and paprika. Allow it to cook.

Take an egg beater and beat the eggs well till fluffy. Add salt and pepper. Check with a fork, if the potatoes are almost cooked. Pour in the egg. Toss around and take it out on to a serving plate. Sprinkle grated cheese and serve with toasted bread. A healthy and yummy breakfast recipe.
